Ingredients
  

  • 1 pound boneless, skinless chicken breasts cut into one-inch cubes
  • pink Himalayan salt
  • course-ground black pepper
  • extra virgin olive oil
  • 2 cups sweet potato thinly sliced
  • 1 cup salsa
  • 1 cup black beans, canned rinsed and drained
  • 1 cup chili beans, canned rinsed and drained
  • 1 cup diced onion
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1/2 cup sliced almonds optional

Instructions
 

  • Heat oven to 350 degrees.
  • Put about a tablespoon of olive oil in a cast iron skillet; heat over medium heat.
  • Add chicken to the skillet; season with salt and pepper; sauté until browned. Remove from skillet and set aside.
  • Add sweet potatoes and salsa to the skillet; sauté for about 5 minutes.
  • In a large, shallow, greased baking dish, layer the chicken, sweet potatoes, beans, onions, corn, and peas. Top with sliced almonds, if using.
  • Bake for 25 minutes.
  • Optionally, you may want to spice it up with fajita seasoning, cumin, chili powder, paprika, etc.
