Heat oven to 350 degrees.
Put about a tablespoon of olive oil in a cast iron skillet; heat over medium heat.
Add chicken to the skillet; season with salt and pepper; sauté until browned. Remove from skillet and set aside.
Add sweet potatoes and salsa to the skillet; sauté for about 5 minutes.
In a large, shallow, greased baking dish, layer the chicken, sweet potatoes, beans, onions, corn, and peas. Top with sliced almonds, if using.
Bake for 25 minutes.
Optionally, you may want to spice it up with fajita seasoning, cumin, chili powder, paprika, etc.
