Baked Cod
Ingredients
- 1 tbsp Olive Oil
- 1 Onion, medium thinly sliced
- 6 oz Mini Sweet Peppers or bell peppers
- 1/2 tsp Pink Himalayan Salt
- 2 cups Cherry or Grape Tomatoes
- 8 Sprigs Fresh Thyme
- 1 1/2 lbs Cod Fillets
- 1/4 cup Water
- 1/4 tsp Black Pepper
Instructions
- Heat oven to 450 degrees F.
- Heat olive oil in a large, oven-safe skillet.
- Add onion, peppers, and 1/4 teaspoon salt. Cook, stirring occasionally, until the onions are almost tender 9about 5 minutes).
- Add tomatoes and thyme; cook for an additional 2 minutes.
- Add cod fillets and water. Sprinkle cod with the remaining 1/4 teaspoon salt and the pepper.
- Cover and bake in preheated oven until cod is cooked through (about 15 minutes).
- Discard thyme sprigs and serve.
