Ingredients
  

  • 1 tbsp Olive Oil
  • 1 Onion, medium thinly sliced
  • 6 oz Mini Sweet Peppers or bell peppers
  • 1/2 tsp Pink Himalayan Salt
  • 2 cups Cherry or Grape Tomatoes
  • 8 Sprigs Fresh Thyme
  • 1 1/2 lbs Cod Fillets
  • 1/4 cup Water
  • 1/4 tsp Black Pepper

Instructions
 

  • Heat oven to 450 degrees F.
  • Heat olive oil in a large, oven-safe skillet.
  • Add onion, peppers, and 1/4 teaspoon salt. Cook, stirring occasionally, until the onions are almost tender 9about 5 minutes).
  • Add tomatoes and thyme; cook for an additional 2 minutes.
  • Add cod fillets and water. Sprinkle cod with the remaining 1/4 teaspoon salt and the pepper.
  • Cover and bake in preheated oven until cod is cooked through (about 15 minutes).
  • Discard thyme sprigs and serve.
