- 1 Tbsp Olive Oil
- 8 Eggs
- Salt and Pepper to taste
- 4 Cups Prepared Jasmine Rice
- 15 oz Black Beans canned, drained, and rinsed
- Fajita Seasoning
- 2 Tbsp Minced Garlic
- 2 Tsp Chopped Fresh Cilantro
- 2 Cups Cherry Tomatoes Quartered
- 1 Cup Chopped Bell Peppers
- 1/2 Cup Chopped Onion
Optional Toppings
- Pickled Jalapenos
- Salsa
- Avocados
- Sour Cream
- Shredded Cheese
- Lime Wedge
Toss black beans with fajita seasoning and garlic. In an oven-proof serving dish (or baking dish), arrange the rice and black beans. Place in 350 degree oven to warm while preparing eggs.
In a small skillet, heat the olive oil. Fry eggs in the oil; season with salt and pepper, to taste. (If you prefer, scramble, poach, or boil the eggs.)
Once warm, remove the rice and beans from the oven. Arrange eggs with the rice and beans. Top with bell peppers, onions, tomatoes, and any desired toppings.
