Ingredients
  

  • 8 Eggs
  • 2 Tbsp Sour Cream
  • 1 Tbsp Olive Oil High quality, pure EVOO
  • 1 Tbsp Minced Garlic
  • 1 Red Bell Pepper Diced
  • 1/2 Onion Minced/Diced
  • 4 Slices Thick-Cut Bacon Cooked until crispy
  • Salt and Pepper, to taste
  • 4 Whole-Grain Wraps/Flatbreads
  • 1/2 Cup Shredded Cheddar or Mexican Blend Cheese
  • 1 Avocado, diced Optional
  • Salsa Optional

Instructions
 

  • Whisk eggs and sour cream together in a large bowl.
  • Heat olive oil in a a large skillet over medium-high heat.
  • Add garlic, red pepper, and onion; sauté 3-5 minutes.
  • Add eggs; reduce heat to medium; cook until eggs are set, stirring occasionally.
  • Place 1/4 of the egg mixture and 1 slice of bacon on each flatbread; top with avocado and salsa, if using; sprinkle with cheese; wrap to seal. Enjoy.
