Breakfast Burrito
Ingredients
- 8 Eggs
- 2 Tbsp Sour Cream
- 1 Tbsp Olive Oil High quality, pure EVOO
- 1 Tbsp Minced Garlic
- 1 Red Bell Pepper Diced
- 1/2 Onion Minced/Diced
- 4 Slices Thick-Cut Bacon Cooked until crispy
- Salt and Pepper, to taste
- 4 Whole-Grain Wraps/Flatbreads
- 1/2 Cup Shredded Cheddar or Mexican Blend Cheese
- 1 Avocado, diced Optional
- Salsa Optional
Instructions
- Whisk eggs and sour cream together in a large bowl.
- Heat olive oil in a a large skillet over medium-high heat.
- Add garlic, red pepper, and onion; sauté 3-5 minutes.
- Add eggs; reduce heat to medium; cook until eggs are set, stirring occasionally.
- Place 1/4 of the egg mixture and 1 slice of bacon on each flatbread; top with avocado and salsa, if using; sprinkle with cheese; wrap to seal. Enjoy.
