Ingredients
  

  • 3 tbsp Olive Oil plus some to drizzle the finished dish
  • 1 1/4 pounds Chicken Breast Cutlets
  • 1/2 tsp Pink Himalayan Salt
  • 1 1/4 pounds Tomatos chopped
  • 3 cloves Garlic
  • 8 ounces Fresh Mozzarella Pearls (mini mozzarella balls)
  • 1/4 cup Chopped Fresh Basil

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and cook until done (160 degrees F), turning occasionally.
  • Transfer chicken to a plate and cover to keep warm.
  • Add tomatoes, garlic, and salt to the skillet. Cook 3 minutes, stirring and scraping to prevent tomatoes from sticking).
  • Top the chicken with the tomato sauce.
  • If prepping ahead, divide the chicken/tomato into 4 containers. Reheat before moving to the final step.
  • Top the chicken and tomatoes with mozzarella and basil. Drizzle with additional olive oil; sprinkle with salt, to taste.
