Heat olive oil in a large skillet over medium-high heat.
Add chicken and cook until done (160 degrees F), turning occasionally.
Transfer chicken to a plate and cover to keep warm.
Add tomatoes, garlic, and salt to the skillet. Cook 3 minutes, stirring and scraping to prevent tomatoes from sticking).
Top the chicken with the tomato sauce.
If prepping ahead, divide the chicken/tomato into 4 containers. Reheat before moving to the final step.
Top the chicken and tomatoes with mozzarella and basil. Drizzle with additional olive oil; sprinkle with salt, to taste.
