Chicken Caprese
Ingredients
- 3 tbsp Olive Oil plus some to drizzle the finished dish
- 1 1/4 pounds Chicken Breast Cutlets
- 1/2 tsp Pink Himalayan Salt
- 1 1/4 pounds Tomatos chopped
- 3 cloves Garlic
- 8 ounces Fresh Mozzarella Pearls (mini mozzarella balls)
- 1/4 cup Chopped Fresh Basil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until done (160 degrees F), turning occasionally.
- Transfer chicken to a plate and cover to keep warm.
- Add tomatoes, garlic, and salt to the skillet. Cook 3 minutes, stirring and scraping to prevent tomatoes from sticking).
- Top the chicken with the tomato sauce.
- If prepping ahead, divide the chicken/tomato into 4 containers. Reheat before moving to the final step.
- Top the chicken and tomatoes with mozzarella and basil. Drizzle with additional olive oil; sprinkle with salt, to taste.
