Egg and Mater Scramble

- 4 eggs
- salt and pepper to taste
- 1 tsp herbes de Provence
- 1 tbsp butter
- 1/2 cup fresh green beans chopped
- 1/2 cup cherry tomatoes halved
- 1/2 avocado diced
- 1/2 cup feta cheese crumbled
Whisk together eggs and seasonings.
In a skillet over medium heat, melt 1/2 of the butter. Add the green beans and sauté until softened (5-7 minutes). Remove from skillet and set aside.
In the same skillet, melt remaining butter. Add egg mixture; gently toss eggs until nearly cooked through. Add the green beans, tomatoes, and avocado; gently scramble until eggs are cooked to desired doneness.
Top with feta cheese and serve.
