Ingredients
  

  • 4 eggs
  • salt and pepper to taste
  • 1 tsp herbes de Provence
  • 1 tbsp butter
  • 1/2 cup fresh green beans chopped
  • 1/2 cup cherry tomatoes halved
  • 1/2 avocado diced
  • 1/2 cup feta cheese crumbled

Instructions
 

  • Whisk together eggs and seasonings.
  • In a skillet over medium heat, melt 1/2 of the butter. Add the green beans and sauté until softened (5-7 minutes). Remove from skillet and set aside.
  • In the same skillet, melt remaining butter. Add egg mixture; gently toss eggs until nearly cooked through. Add the green beans, tomatoes, and avocado; gently scramble until eggs are cooked to desired doneness.
  • Top with feta cheese and serve.
