Egg Muffins
Ingredients
- Coconut Oil or Butter to grease muffin tins
- 3 Slices Bacon
- 1 Small Yellow Onion chopped
- 1 Bell Pepper chopped
- 2 cups Baby Spinich chopped
- 6 Large Eggs
- 3 tbsp Milk
- 1/4 tsp Paprika
- 1/2 tsp Garlic Powder
- Salt and Pepper to taste
- 1/2 cup Shredded Mozzarella
Instructions
- Preheat oven to 350 degrees F. Grease a 12 cup muffin tin with the oil or butter.
- In a skillet, over medium heat, cook the bacon until crispy. Drain on a paper towel and crumble.
- Add onion and bell pepper to skillet; cook until tender (about 5 minutes); Add spinach and cook 2 minutes more.
- In mixing bowl, whisk eggs, milk, paprika, garlic powder, salt, and pepper. Stir in the vegetable mixture, bacon, and mozzarella cheese.
- Spoon or pour into prepared muffin tins.
- Bake until cooked through and golden brown (30-35 minutes).
- Allow to cool. Store in the refrigerator in an air tight container until ready to eat.
