Ingredients
  

  • Coconut Oil or Butter to grease muffin tins
  • 3 Slices Bacon
  • 1 Small Yellow Onion chopped
  • 1 Bell Pepper chopped
  • 2 cups Baby Spinich chopped
  • 6 Large Eggs
  • 3 tbsp Milk
  • 1/4 tsp Paprika
  • 1/2 tsp Garlic Powder
  • Salt and Pepper to taste
  • 1/2 cup Shredded Mozzarella

Instructions
 

  • Preheat oven to 350 degrees F. Grease a 12 cup muffin tin with the oil or butter.
  • In a skillet, over medium heat, cook the bacon until crispy. Drain on a paper towel and crumble.
  • Add onion and bell pepper to skillet; cook until tender (about 5 minutes); Add spinach and cook 2 minutes more.
  • In mixing bowl, whisk eggs, milk, paprika, garlic powder, salt, and pepper. Stir in the vegetable mixture, bacon, and mozzarella cheese.
  • Spoon or pour into prepared muffin tins.
  • Bake until cooked through and golden brown (30-35 minutes).
  • Allow to cool. Store in the refrigerator in an air tight container until ready to eat.
