Preheat oven to 350 degrees F. Grease a 12 cup muffin tin with the oil or butter.
In a skillet, over medium heat, cook the bacon until crispy. Drain on a paper towel and crumble.
Add onion and bell pepper to skillet; cook until tender (about 5 minutes); Add spinach and cook 2 minutes more.
In mixing bowl, whisk eggs, milk, paprika, garlic powder, salt, and pepper. Stir in the vegetable mixture, bacon, and mozzarella cheese.
Spoon or pour into prepared muffin tins.
Bake until cooked through and golden brown (30-35 minutes).
Allow to cool. Store in the refrigerator in an air tight container until ready to eat.
