Eggs Benedict
A healthy spin on the classic.
Ingredients
- butter
- 1 medium onion, whole sliced in 1/4 inch thick slices
- 3 slices smoked chicken breast (deli)
- 3 cups fresh spinach
- 3 slices tomato
- 1 1/2 oz fresh grated parmesan cheese
- 3 eggs individually poached or fried
Healthy "Hollandaise" Sauce
- 2 tbsp mayo
- 1/3 cup plain Greek yogurt
- 1/2 tsp lemon juice
- 1/4 tsp Dijon mustard
- 1 pinch sugar
- 1 pinch chili powder
Instructions
- Lightly butter a small frying pan.
- Gently place the whole onion slices in the pan (do not break apart; this is the base for your eggs benedict). Cook until the bottom of the onion is nicely browned. Gently flip over and cook until the other side is nicely browned. Carefully remove from pan onto serving plate.
- Add spinach to the pan; cook until it shrinks to about half its original volume. Remove from pan and set aside.
- Top each onion slice with a tomato slice, chicken breast slice, spinach, and cheese. Top with each with an egg.
"Hollandaise" Sauce
- Whisk all sauce ingredients together.
- Drizzle over eggs and serve.
