Gingered Beef and Broccoli
Gingered Beef and Broccoli
- 2 Tbsp Olive Oil
- 12 oz New York Strip or Sirloin Steak Trimmed and sliced very thin (or, use a leftover steak, prepared to your liking, thinly sliced).
- 3 Cups Broccoli Florets
- 1/4 Cup Balsamic Vinegar
- 1/4 Cup Red Cooking Wine (Optional; if not using, increase balsamic vinegar to 1/2 cup)
- 1 Tbsp Minced Ginger
- 2 Bell Peppers Seeded and thinly sliced
- 8 Cups Spring Mix
In a large skillet, heat olive oil. Add steak and sauté until desired doneness. Remove steak from skillet, reserving drippings. Add remaining ingredients (except the spring mix greens) to the heated skillet. Sauté for 3-5 minutes; return beef to skillet and cook for another minute.
Serve steak mixture over a bed of greens. Top with vinaigrette, if desired.
