Ham and Egg Scramble

- 8 eggs beaten
- 3 tbsp milk
- salt and pepper to taste
- 1 tbsp olive oil
- 1 jalapeño pepper seeded and chopped
- 1 cup ham chopped
- 1 cup shredded cheddar cheese
Whisk eggs, milk, salt, and pepper together.
In a large skillet, over medium heat, warm the olive oil.
Add jalapeño and sauté for a minute or so.
Add ham and cook until heated through.
Pour egg mixture in to skillet. Cook, stirring occasionally, until eggs are set. Add 1/2 of the cheese; stir into eggs.
Transfer to serving dish and sprinkle with remaining cheese. Serve.
