Ingredients
  

  • 8 eggs beaten
  • 3 tbsp milk
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 1 jalapeño pepper seeded and chopped
  • 1 cup ham chopped
  • 1 cup shredded cheddar cheese

Instructions
 

  • Whisk eggs, milk, salt, and pepper together.
  • In a large skillet, over medium heat, warm the olive oil.
  • Add jalapeño and sauté for a minute or so.
  • Add ham and cook until heated through.
  • Pour egg mixture in to skillet. Cook, stirring occasionally, until eggs are set. Add 1/2 of the cheese; stir into eggs.
  • Transfer to serving dish and sprinkle with remaining cheese. Serve.
