Jalapeno Popper Salad
Ingredients
- 1/4 Red Onion peeled
- 2 Jalapeno Peppers
To Make the Dressing
- 1/2 cup Sour Cream
- 1/2 cup Mayo
- 2 oz Cream Cheese softened
- 1 tsp Garlic Powder
- 1 tsp Smoked Paprika (regular will be fine if smoked paprika is not available)
- 1 tsp Chili Powder
- 1/4 tsp Pink Himalayan Salt
- 1/4 tsp Ground Black Pepper
For the Salad
- 6 cups Chopped Romaine Lettuce
- 1/2 cup Shredded Sharp Cheddar Cheese
- 1/2 cup Shredded Pepper Jack Cheese
- 1/3 cup Diced Tomatoes
- 4 Sliced Bacon Cooked and Crumbled
Instructions
Grill the Peppers and Onions
- On a hot grill (high heat- 400 degrees F), roast the onion and peppers for 3-5 minutes, turning occasionally. Cook until skins lift from the peppers and onion is softened. Remove from grill and let cool. Peel the peppers. Dice the peppers and onion.
For the Dressing
- Combine dressing ingredients and mix until smooth.
Assemble the Salad
- In a large bowl, add lettuce, roasted peppers and onions, cheeses, tomato, and bacon. Drizzle with dressing. Toss and serve.
