Ingredients
  

  • 1/4 Red Onion peeled
  • 2 Jalapeno Peppers

To Make the Dressing

  • 1/2 cup Sour Cream
  • 1/2 cup Mayo
  • 2 oz Cream Cheese softened
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika (regular will be fine if smoked paprika is not available)
  • 1 tsp Chili Powder
  • 1/4 tsp Pink Himalayan Salt
  • 1/4 tsp Ground Black Pepper

For the Salad

  • 6 cups Chopped Romaine Lettuce
  • 1/2 cup Shredded Sharp Cheddar Cheese
  • 1/2 cup Shredded Pepper Jack Cheese
  • 1/3 cup Diced Tomatoes
  • 4 Sliced Bacon Cooked and Crumbled

Instructions
 

Grill the Peppers and Onions

  • On a hot grill (high heat- 400 degrees F), roast the onion and peppers for 3-5 minutes, turning occasionally. Cook until skins lift from the peppers and onion is softened. Remove from grill and let cool. Peel the peppers. Dice the peppers and onion.

For the Dressing

  • Combine dressing ingredients and mix until smooth.

Assemble the Salad

  • In a large bowl, add lettuce, roasted peppers and onions, cheeses, tomato, and bacon. Drizzle with dressing. Toss and serve.
