Ingredients
  

  • 2 Large Russet Potatoes With peels on; shredded and squeezed of excess liquid
  • 2 tbsp Olive Oil
  • 8 Slices Bacon Chopped and cooked until crispy
  • 10 Large Eggs
  • 1 Cup Whole Milk
  • 2 Cloves Garlic, minced
  • 2 tsp Paprika
  • Pink Himalayan Salt
  • Ground Black Pepper
  • 2 cups Shredded Cheddar Cheese
  • 2 Green Onions thinly sliced, plus more for garnish, if desired
  • Hot Sauce or Salsa for serving, if desired

Instructions
 

  • Preheat oven to 350 degrees F.
  • Coat the shredded potatoes with the olive oil. Press into the bottom of a 9 x 13 baking dish.
  • Top the shredded potatoes with cheese, bacon, and green onions.
  • Whisk together eggs, milk, garlic, paprika, salt, and pepper. Pour over potatoes.
  • Bake in preheated oven until eggs are set and the top is golden brown (35-40 minutes)
