Loaded Breakfast Bake
Ingredients
- 2 Large Russet Potatoes With peels on; shredded and squeezed of excess liquid
- 2 tbsp Olive Oil
- 8 Slices Bacon Chopped and cooked until crispy
- 10 Large Eggs
- 1 Cup Whole Milk
- 2 Cloves Garlic, minced
- 2 tsp Paprika
- Pink Himalayan Salt
- Ground Black Pepper
- 2 cups Shredded Cheddar Cheese
- 2 Green Oinions thinly sliced, plus more for garnish, if desired
- Hot Sauce or Salsa for serving, if desired
Instructions
- Preheat oven to 350 degrees F.
- Coat the shredded potatoes with the olive oil. Press into the bottom of a 9 x 13 baking dish.
- Top the shredded potatoes with cheese, bacon, and green onions.
- Whisk together eggs, milk, garlic, paprika, salt, and pepper. Pour over potatoes.
- Bake in preheated oven until eggs are set and the top is golden brown (35-40 minutes)
