- 2 Large Russet Potatoes With peels on; shredded and squeezed of excess liquid
- 2 tbsp Olive Oil
- 8 Slices Bacon Chopped and cooked until crispy
- 10 Large Eggs
- 1 Cup Whole Milk
- 2 Cloves Garlic, minced
- 2 tsp Paprika
- Pink Himalayan Salt
- Ground Black Pepper
- 2 cups Shredded Cheddar Cheese
- 2 Green Onions thinly sliced, plus more for garnish, if desired
- Hot Sauce or Salsa for serving, if desired
Preheat oven to 350 degrees F.
Coat the shredded potatoes with the olive oil. Press into the bottom of a 9 x 13 baking dish.
Top the shredded potatoes with cheese, bacon, and green onions.
Whisk together eggs, milk, garlic, paprika, salt, and pepper. Pour over potatoes.
Bake in preheated oven until eggs are set and the top is golden brown (35-40 minutes)
