Ingredients
  

  • 1 tsp butter
  • 6 egg whites
  • 2 eggs
  • 1/4 tsp cinnamon
  • 1 tsp maple syrup
  • 1/2 cup cottage cheese
  • 2 small peaches diced
  • 1/4 cup crushed pecans
  • 1/2 cup plain Greek yogurt

Instructions
 

  • Preheat a large skillet over medium heat. Add butter.
  • Using a hand mixer or wire whisk, whisk egg whites, eggs, cinnamon, and maple syrup together. Pour mixture into heated skillet.
  • Cook for a few minutes, until the top of the mixture begins to bubble and the bottom is golden brown. Gently flip the omelet, and cook until the other side is golden brown. Transfer to a serving plate.
  • Mix cottage cheese, peaches, and pecans together. Spoon mixture onto one half of the omelet. Fold the other half over the mixture. Garnish with yogurt and serve.
