- 6 oz Fresh Green Beans, Trimmed
- 1/4 cup Water
- Salt and Pepper to taste
- 1 cup Grape or Cherry Tomatoes
- 1/4 cup Pitted Kalamata Olives
- 1 tbsp Olive Oil
- 2 6 oz Skinless Salmon Fillets
Preheat oven to 425 degrees F. Heat a large cast iron (oven safe) skillet on medium-high. Add green beans and water. Cover and cook for 3 minutes. Drain the beans and transfer to a mixing bowl.
Add tomatoes, olive oil, and a bit of salt to the beans. Toss to coat.
Wipe out the skillet. Transfer the vegetables to the skillet and roast in the oven for 8 minutes.
Season the salmon with salt and pepper.
Nestle the salmon fillets among the vegetables in the skillet. Roast until salmon is cooked through and flakes with a fork (10-12 minutes).
Drizzle with olive oil. Let rest for 5 minutes. Serve.
