Ingredients
  

  • 1 tbsp butter
  • 4 oz lean ground beef
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • salt and pepper to taste
  • 1 green onion chopped
  • 2 eggs

Instructions
 

  • In a skillet, over medium heat, melt the butter.
  • Add ground beef; brown the beef, separating with a wooden spoon, until cooked through (7-ish minutes).
  • Drain most of the fat; stir seasonings into the ground beef; add 1/2 of the chopped green onion. Fold together until well combined. Transfer to a serving plate; cover to keep warm.
  • In that same skillet, crack the eggs (throw away the shell!); season with salt and pepper; cook the eggs. (Cook to your preferred doneness).
  • Place the eggs on the beef mixture; garnish with remaining green onion and serve.
