Taco Breakfast Bowl
Ingredients
- 1 1/2 Tbsp Extra Virgin Olive Oil
- 1 lb Ground Turkey (see note, below)
- 2 tbsp Chili Powder
- 1 Tsp Cumin
- 1 Tsp Black Pepper
- 1 Tsp Pink Himalayan Salt
- 1/2 Cup Water
- 4 Eggs Fried to your desired doneness
- 4 Cups Baby Spinach
- 1 Green Bell Pepper Diced
- 1 Tomato Diced
- 1/2 Onion Diced
- 1/2 Cup Black Olives Sliced (Optional)
- 1 Avocado Mashed (Optional)
- Sour Cream (Optional)
Instructions
- If not using prepared taco meat, heat a skillet over medium heat.
- Add olive oil.
- Add the ground turkey and sauté, stirring frequently, until cooked through.
- Add chili powder, oregano, cumin, black pepper, salt, and water.
- Sauté for another minute or so.
- Reduce heat and simmer until all water is absorbed.
- Fry your eggs and set aside.
- Divide spinach between 4 bowls. Top with green pepper, tomato, avocado, olives, sour cream, taco meat, and fried egg.
